Ingredients:
1 cup cashew nuts
1 cup aquafaba
1 clove of garlic
1 tbs apple cider vinegar
1 ½ tbs nutritional yeast
1 tbs tapioca flour
1 tsp agar agar
1 tsp salt
Soak the nuts overnight. Drain them the next day, rinse them with running water and blend them in a blender together with the rest of the ingredients. Pour the mixture on a heated pan and constantly mix so that the mixture doesn't stick to the bottom. It is best to use a wooden spoon with a straight edge. The mixture will slowly begin to thicken and clump into a ball just like real mozzarella. It is then ready to be put in a glass bowl. Let it cool, cover with a lid, and store in the fridge.
Mozzarella is soft enough to spread it on bread and hard enough to use it in salads, add to a pizza, and to garnish all sorts of dishes with it.
