8 young medium-sized eggplants
green part of a spring onion
2 tbs roasted sesame seeds
1 tbs tahini
salt and pepper
Preheat the oven to 392°F/200°C. Halve the eggplants and make a criss-cross cut on the inside. Place them in an oven with the cut side up, add salt and bake them until they are golden brown, for about one hour. When they are sufficiently baked, remove the inside of the eggplant and add it to a food processor. Add the rest of the ingredients and mix everything into a smooth cream. Add some water if needed for a smoother mixing process.
You can spice it with sweet paprika and a pinch of cayenne pepper. Fresh cilantro is also a great addition to baba ganoush.
