MAYONNAISE

Preparation time: 20 min

Difficulty: easy

Ingredients:

  • 100 g cashew nuts

  • 200 g silky tofu

  • 50 ml soy cream (or other plant-based creams)

  • 1 tbs mustard

  • ½ tsp salt

  • juice of one lemon or lime


You can also add:

  • black pepper

  • herbs de Provence

  • garlic

  • more salt or soy sauce

  • more lemon juice or vinegar

  • other herbs



Soak the cashew nuts in water for 4 hours. Then rinse them with fresh water and add them to a blender. Add soy cream, mustard, salt, and lemon. Mix well to get a creamy texture. Add water gradually to form a nice cream. Add silky tofu and mix well again. If you wish, you can add the extra ingredients.
