LIGHT SALAD

Preparation time: 20-40 min

Difficulty: easy


Serves 2


Ingredients:

  • 4 medium zucchini

  • 1 spring onion

  • a few sprigs of fresh marjoram

  • a few sprigs of fresh oregano

  • tamari

  • 3 orange bell peppers

  • 2 large handfuls of mini plum tomatoes or cherry tomatoes

  • a bunch of fresh basil



Cut zucchini into zoodles with a spiral cutter and add it to a large bowl. Add finely chopped spring onion, marjoram, and oregano. Drizzle with a spoon or two of tamari, mix well, and let it marinate at room temperature until zoodles release water. Add thin sticks of orange bell pepper and randomly cut tomatoes.


Before serving, sprinkle with fresh basil leaves. Enrich the salad with pan-fried tempeh or tofu, and avocado. You may also sprinkle roasted pumpkin seeds or sunflower seeds on top.
