SUMMER SALAD WITH YOUNG PEAS AND ARUGULA

Preparation time: 20 min

Difficulty: easy

Serves 2

Ingredients:

  • 100-150 g young peas

  • 1 large seasonal lettuce

  • 2 handfuls of young arugula

  • 2 young carrots

  • 10 cherry tomatoes

  • 1 avocado

  • a bunch of fresh chives

  • black cumin seeds

  • 1 tbs lemon juice

  • 1 tbs cold-pressed olive oil

  • pinch of quality salt



Cook the peas over salty steam and let them cool.


Tear the lettuce and arugula into smaller pieces, roughly chop the chives, half the tomatoes, and grate the carrots. Serve in a large salad bowl and place steamed peas and avocado on the top, then sprinkle with black cumin seeds. Season with some salt, olive oil, and lemon juice, or any other dressing that you like.
