Preparation time: 20-40 min
310 g polenta
1 l water
2 tbs nutritional yeast
1 tsp coconut oil
Add salt, pepper, and coconut oil to the water and cook polenta according to the manufacturer's instructions. Mix nutritional yeast with cooked polenta and pour it into a pizza tray*.
Set aside and let it cool and harden.
*The ingredients listed are for a 28 cm diameter pizza tray.
200 g tomato puree
180 g plant-based mozzarella
1 small onion
½ bell pepper
a handful of corn
*optional: vegetables of your choice
Preheat the oven to 180°C.
Season tomato puree with salt, basil, and oregano, cut the onion and pepper into thin rings.
Spread the tomato mixture over polenta, add grated mozzarella, onion, corn, and pepper.
Bake for 20 minutes with ventilation or until the vegetables are nicely done.
