150 g soba noodles
250 g grass-green russula/ lat.:Russula aeruginea (or any other edible mushroom of your choice)
2 spring onions
1 tbs olive oil
2 tbs homemade cream cheese
Clean the mushrooms (without water to avoid over-soaking them) and cut them into larger pieces. Saute them on some oil until they get a golden-brown crust. Add chopped spring onion and thyme, and saute for a few more minutes until the onion has softened a little.
Cook the soba noodles according to the manufacturer's instructions - they are usually cooked in a few minutes. Add the soba noodles to the mushrooms, add cream cheese, season, and mix well.
Remove from the heat, otherwise, the cheese will start to stick to the pan.
Let it rest for a few minutes until all the flavors combine and serve.
