  • 1 leek 

  • 1 tbs crushed coriander seeds

  • 1/2 can jackfruit in brine

  • 200 g tofu with basil (or natural tofu)

  • 1 jar of diced tomatoes

  • 1 can of coconut milk

  • 2 red peppers

  • 2 handfuls baby spinach

  • water 

  • salt and pepper

Finely slice the leek, water-fry it, add coriander and allow it to develop a pleasant fragrance. Then add jackfruit after gently loosening it with your hands. Season, add water and mix it well. Add diced tofu and tomatoes and let it simmer for about half an hour. Add coconut milk, peppers cut in strips and young spinach. Bring gently to boil so that the spinach wilts. Season to taste and serve.
