  • 2 brown onions

  • 2 tsp ground coriander

  • 2 tsp caraway

  • 2 tsp ground red paprika

  • 3 bay leaves

  • 2 tbs tomato paste

  • 500 g brown beans

  • 3 red carrots

  • 500 ml tomato puree

  • water (as much as you need to get the desired consistency of the sauce)

  • salt and pepper

Soak the beans overnight and cook the next day. Drain and cool. If you want to save time, you can cook the beans the day before or use the ones in a jar.

Slice the onions to thin slices and water-fry them, add seasoning and tomato paste, salt and pepper, and fry until everything gets a nice fragrance. Slice carrots to thin slices and add them, together with beans, to the pan, then pour over tomato puree. Add some water and simmer on low heat until you get the right consistency. Season to taste and serve.
