Makes about 10 balls


  • 300 g soaked cashew nuts

  • ½ tsp bourbon vanilla

  • a few tbs coconut blossom syrup

  • a few tbs ground coconut flakes

  • orange zest of one organic orange

  • 100 - 200 ml thick coconut milk

  • roasted macadamia nuts

  • 1 cup finely ground coconut flakes

Soak cashew nuts overnight or at least for four hours then drain them and add them to a food processor. Add vanilla, sweetener, coconut milk, orange zest, and a little bit of milk. Blend to get a smooth batter. If the batter is too dry, add milk, and if it is too wet, add coconut flour. When you hold the batter, it should keep its shape. Make balls of your preferred size around a macadamia nut, so that the nut is in the middle. Finally, roll the balls in coconut flakes. Before serving, place the balls in the fridge for a few hours.
