Time of preparation: 20-40 min
120 ml aquafaba (chickpea water)
2 tbs sugar (optional)
200 g dark chocolate (min. 70%)
pinch of salt
Melt dark chocolate over steam and allow it to cool down. Using a powerful hand mixer, whisk aquafaba, a pinch of salt and sugar for at least 10 minutes or to stiff peaks. Gently and evenly fold in the melted chocolate. Divide among glasses, garnish with fresh raspberries and ground cacao beans and place in the fridge for at least two hours.
