BANANA BREAD WITH GOJI BERRIES AND CASHEW NUTS

Ingredients:

  • 4 very ripe bananas

  • 2 tbs coconut butter

  • 1 cup coconut sugar

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 250 g flour of your choice (spelt, wheat...)

  • 1/2 cup goji berries

  • 1/2 cup cashew nuts

  • 1/2 cups cacao beans



Add bananas to a bowl and mash them with a fork then add melted coconut butter. While stirring add baking powder, cinnamon, and gradually flour. Finally, mix in goji berries, cashews, and cacao beans. Cover the baking tray with a baking paper and add the batter. Preheat the oven to 180°C and bake for 35 minutes.


You can replace goji berries, cashews, and cacao beans with macadamia nuts, raisins, candied fruit, hazelnuts, or almonds. If you want the bread to be more chocolaty, you can add cacao powder or chocolate spread.
