Baking pan 32 x 13 cm

Wet ingredients:

  • 1 cup soy milk

  • 1 tsp vinegar

  • 1 cup coconut sugar

  • 1 cup coconut oil

  • 2 big ripe bananas

  • 1 banana for the top

Add all ingredients, except banana that goes on top, to a blender and quickly blend. There is nothing wrong if there is a smaller piece of banana left.

Dry ingredients:

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 2 ½ cups spelt flour

  • 1 tsp baking powder

  • 1 tsp bicarbonate soda

  • 1 medium sweet, juicy apple, grated

Add dry ingredients to a bigger bowl and mix them well. Add wet ingredients to dry ones and mix quickly, then pour everything into an oblong pan. Cut the extra banana vertically and nicely place it on top. Preheat the oven to 175°C and bake for 45 minutes.

You can also add a cup of chocolate chips or frozen fruit to the dry ingredients.
