250 g spelt flour
1/2 cup coconut sugar
2 tbs coconut butter*
1/2 cup soy cream
1 tsp baking powder
pinch of salt
1 tsp coconut oil
1 tsp cinnamon
lemon zest of half a lemon
1 tsp maple syrup
For the dough, sift the flour, add baking powder, pinch of salt and sugar, and mix well. Heat up the butter and mix it into the flour, add soy cream and knead the dough.
Dice the apples with skin and saute them on coconut oil, add cinnamon, lemon zest, and a teaspoon of maple syrup. Stir for 5 minutes on medium heat so that the apples marinate.
Spread 2/3 of the dough on an oily pie pan and make little holes in it with a fork. Add marinated apples then cut the rest of the dough into strips and nicely spread them on top.
Preheat the oven to 180°C and bake for 30 minutes. When you remove the pie from the oven, sprinkle it with water so the dough softens a little.
*You may use margarine or other vegetable oil instead of coconut butter.
