VEGETABLE CURRY WITH RICE

Time of preparation: 20-40 min

Difficulty: easy


Serves 3

Ingredients:

  • 2 cups rice

  • 1,5 red onion

  • 4 garlic cloves

  • 3 carrots

  • 1,5 pepper (different colors)

  • 1 zucchini

  • pinch of salt

  • 1 tsp thyme

  • lemon juice (one lemon)

  • 1 cup red beans


Curry paste

Ingredients:

  • 2 tsp curry

  • 2 tbs tahini

  • 1,5 cup coconut milk

Water-fry onion and garlic for 5 minutes, add diced vegetables, salt and pepper, and water-fry for another 10 minutes. Mix curry, tahini and 1/2 cup of coconut milk in a cup. If you like spicy food, add chilly.

Add the paste to the vegetables and stir. While stirring, add the rest of coconut milk. Cover with lid and cook for another 10 minutes.

Cook the rice in salted water and remove from the heat. Mix thyme and lemon juice into the rice.

GREEN SALAD


Serves 3

Ingredients:

  • 2 big heads of lettuce (butter, iceberg, batavia, etc.)

  • 1 tomato

  • 2 garlic cloves

  • 1 tbs oil

  • 1-2 tbs vinegar

  • pinch of salt

  • Different types of seeds and nuts (hemp, pumpkin, pine nuts, etc.)


Tear the lettuce, add sliced tomato and chopped garlic. Season, toss, sprinkle with seeds (hemp seeds, pumpkin seeds, pine nuts, etc.), and serve.
