  • 1 big red onion

  • 5 carrots

  • 4 bay leaves

  • 1.5 l tomato puree

  • salt and pepper

Chop the onion and brown it to a nice golden-brown color, season with salt, add grated carrots and bay leaves. Cook until carrots start to caramelize. Season to taste and pour tomato puree and water over it. Let it simmer at low heat for about half an hour to an hour for the sauce to thicken. Serve with roasted chickpea balls or stuffed peppers. Mashed potatoes are of course a staple that goes with it very well.
