TOMATO GAZPACHO

Serves 2


Ingredients:

  • 3 carrots

  • 6 juicy tomatoes

  • white part of spring onion

  • salt and pepper



Juice the carrots and pour the juice into a blender. Cut the tomatoes and add them to a blender together with the spring onion. Season and blend until smooth. Taste and season to taste.


For topping

Ingredients:

  • 1 cucumber

  • few cherry tomatoes

  • few fresh basil leaves


Dice the cucumber and tomatoes. Pour gazpacho into a couple of plates, place the cucumber and tomatoes on top, garnish with basil, and serve.
