  • 500 g Medjool dates

  • 150 g cashew nuts

  • 100 ml oat milk

  • 2 tsp vanilla extract

  • 1 tbs agave syrup (optional, as dates are already sweet enough)

  • 2 tbs cacao

  • 2 tbs chia seeds

  • 3 tbs crushed cacao seeds (cacao nibs)

  • 3 tbs coconut chips

Soak the nuts overnight. The next day, drain and rinse them under running water.

Add them to a blender along with plant-based milk, vanilla, and agave syrup and blend until smooth. Add more milk, if necessary, for a smoother blending process.

Place the mixture into a bowl and add washed chia seeds and mix. These will only thicken the creamy mixture. Place one-half of the cream into a different bowl, add cacao, and mix. Store the two mixtures in a cool place and in the meantime, prepare the dates.

Cut the date lengthwise, remove the pit, and spread it as if to make a little basket that you will later fill with cream. Do the same with the rest of the dates.

Then start filling the dates with the cream. Help yourself with a teaspoon. Decorate the vanilla stuffed dates with coconut chips, and the chocolate dates with cacao nibs.
