ROASTED YOUNG BEETROOTS AND TOMATOES

Serves 4


Ingredients:

  • 7 young beets

  • 10 tomatoes

  • few sprigs of fresh rosemary

  • few sprigs of fresh thyme

  • salt

  • 3 to 5 tbs balsamic vinegar



Cut the beetroots and tomatoes into quarters. Put all the ingredients into a baking pan and roast at 150°C for about an hour. Both the beetroots and the tomatoes should be well-done. When they are still hot, drizzle balsamic vinegar over them and let them cool.
