RICE SOUFFLE WITH APPLES

Preparation time: 40+ min

Difficulty: easy

Serves 6

Ingredients:

  • 1 liter oat milk (or other plant-based milk)

  • 250 g rice

  • 4 apples

  • 40 g coconut sugar + 10 g for caramelizing

  • 2 tsp cinnamon

  • 1 tsp vanilla

  • 1 tsp lemon zest



Pour the oat milk into a pot and bring to a boil.

When the milk starts to boil, add rice, vanilla, a teaspoon of cinnamon, lemon zest, and sugar.

Then cook the rice on medium heat for 20-30 minutes.


While the rice is cooking, peel and grate the apples.

When the rice is done, add apples and more sugar if needed and mix well.

Pour into a pre-greased baking pan.

Mix 10 g of coconut sugar and a teaspoon of cinnamon in a cup and sprinkle the mixture over the rice to get a neat caramelized crust.

Preheat the oven to 180 °C and bake for approx. 45 minutes.

When the pudding is done, let it cool down and then cut it into nice cubes.


Rice pudding is a perfect solution for a pre-cooked breakfast or lunch and you can bring it with you wherever you go.
