Ingredients:Â
1/2 red cabbageÂ
3 carrots
15 cherry tomatoes
5 prunes (dried plums)
1 tsp dried basil
1 tsp oregano
6 young beetroot greens
salt and pepper
balsamic vinegar
Blanch the beetroot greens, allow them to cool down and then chop them. Use a mandolin slicer to shred the cabbage and carrots. Halve the cherry tomatoes and finely chop the prunes. Put all the ingredients in a bigger bowl, season them, stir well and serve.
