RED CABBAGE AND PRUNES SALAD

Serves 3


Ingredients: 

  • 1/2 red cabbage 

  • 3 carrots

  • 15 cherry tomatoes

  • 5 prunes (dried plums)

  • 1 tsp dried basil

  • 1 tsp oregano

  • 6 young beetroot greens

  • salt and pepper

  • balsamic vinegar



Blanch the beetroot greens, allow them to cool down and then chop them. Use a mandolin slicer to shred the cabbage and carrots. Halve the cherry tomatoes and finely chop the prunes. Put all the ingredients in a bigger bowl, season them, stir well and serve.
