  • phyllo dough (10 sheets)

  • 800 g natural tofu

  • 500 g soy yogurt

  • 200 g poppy seeds

  • 300 g ground walnuts

  • 10 sweet apples

  • 600-800 ml plant-based milk (almond, coconut, rice...)

  • sweetener of your choice (coconut sugar, maple syrup...)

  • juice of 1 lemon

  • lemon zest

  • 1-2 tbs rum

  • cinnamon

You can adjust ingredients such as apples, poppy seeds, lemon, walnuts, and rum to taste. The cake is juicier with more apples, and if you love poppy seeds, you can add more. First, make four layers of this traditional dessert.

Poppy layer:

Bring 300-400 ml of milk to a boil. Place the poppy seeds into a bowl and mix in the hot milk and sweetener. Stir and wait for the poppy seeds to soak in the milk. You will get a paste-like texture to easily spread it over the dough. If you are using sweet milk such as rice, you don't need to add sweeteners.

“Cheese” layer:

To prepare vegan cheese you must first break tofu (or vegan feta cheese) with your fingers and mix it with yogurt. Add a few spoons of lemon juice and lemon zest (half lemon) to the cheese. Taste the mixture and add more lemon juice, lemon zest, or yogurt if needed. To make it look prettier, you can add a pinch of turmeric.

Walnut layer:

Just like poppy seeds, add 300-400 ml of sweetened hot milk to ground walnuts to make the dessert juicier. Add a spoonful or two of rum for a better taste.

Apple layer:

Wash and grate the apples, add some cinnamon and lemon juice to taste.

You can sweeten to taste each of the layers. Once you are happy with the flavors, begin with arranging the layers into a baking tray. First, coat the tray with coconut oil and place the first phyllo dough sheet on the tray. Lightly grease the sheet with oil and place the second sheet on top of the first one. Then start with arranging the layers - poppy, cheese, walnut, and apple. Use only a half of each layer first because traditionally you need to repeat the layers twice. Place a sheet of plain dough between each layer.

Vegan prekmurska gibanica is almost ready. Now you just need to bake it. Bake it for an hour at 200˚C. When the cake is still warm, cut it into squares of any size and sprinkle them with cinnamon. Traditionally, the cake is sprinkled with sugar, but it is just as tasty and much healthier with cinnamon.
