Time of preparation: 20-40 min
500 ml soy milk
1 tbs ground golden flax seeds
5 full tbs white spelt flour
pinch baking powder with wine stone
coconut oil for frying
Briefly mix all ingredients in a blender and leave to set for 15 minutes. If the batter is too runny, add another spoon or two of spelt flour, if it is too thick, add some milk. Brush the frying pan with coconut oil. Stir the batter before you make each pancake. Let me give you a technical tip – use medium heat and wait until the edges of a pancake are loose before flipping it over. Flip it gently but quickly. I use a heat-resistant spatula. Cook on the other side until golden. Another tip - investing in a quality frying pan will save you some nerves.
