For 2 slices of bread
Ingredients:
a large fresh porcini mushroom or a handful of chanterelles or other edible mushrooms
1 tsp olive oil for roasting
2 tbs fresh fermented cheese
small bunch of chives
2 slices of fresh bread
thyme
salt
Clean the mushrooms (not with water if possible to avoid wetting them much) and cut them into slices, but not too thin.
Roast the mushrooms on a greased pan. Add salt and pepper and spice it up with thyme. Roast the mushrooms on both sides until they are golden brown. It is important that the mushrooms are roasted and not sauteed.
Spread the cheese over the slices of bread while the mushrooms are roasting, and sprinkle them with chopped chives. Save some for the decoration.
Finally, spread the mushrooms neatly over the bread and garnish with the leftover chives.
