  • 2 young coconuts (or approx. 500 ml of thick coconut milk)

  • 3 capsules of probiotics

Carefully open the coconuts at the top and pour out the water through a sieve to remove any parts of the shell. Then halve the coconuts and hollow out the white coconut meat and blend it, together with coconut water, in a blender until smooth. If you feel that the mixture is too thick, add some water.

Pour the creamy mixture into a glass bowl. Open 3 capsules of probiotics and add them to the mixture. Use a non-metal spoon so you don't damage the bacteria. Pour the mixture into sterilized jars, cover with a clean cloth and leave it at warm temperature (up to 40°C) or at room temperature for a day or two - depending on the desired consistency and acidity of the yogurt. Monitor it carefully and note that its texture will get even thicker in the fridge.

Save it in the fridge for up to 3 days.

When you decide to make the yogurt again, use the already made yogurt as a starter instead of probiotic capsules (50 ml will be enough for the amount of milk mentioned above).

You can also make the yogurt with a yogurt maker or a dehydrator according to the instruction manual.

To make a fruit yogurt, just mix in fruit puree of your choice.
