2 medium fennel bulbs
15 big leaves of Swiss chard
2 red peppers
small bunch of parsley
salt and pepper
Slice fennel thinly with a mandoline slicer. Remove the hard, white part of the chard and quickly blanch it in salted boiling water. Cut the peppers into thin strips and chop the parsley. Add all ingredients to a bigger bowl, season to taste and serve. We made red beans in tomato sauce with cooked corn and cilantro to go with fennel and chard.
