For the sauce
4 cloves of garlic
lemon juice of 1/2 lemon
2 tbs nutritional yeast
Wash the broccoli and cut it into small pieces. Bring salted water* to a boil and cook it for about 10 minutes or until it's still crunchy on the inside.
Drain it and set aside as you will use it towards the end.
*You may also steam broccoli (for about 20 minutes).
Remove the pit from avocados and mash them*. Drizzle with lemon juice, add salt and pepper to taste.
*You could leave a piece of avocado to add as a garnish in the end.
Fry chopped garlic with a teaspoon of olive oil until a nice fragrance develops. Add ½ of cooked broccoli, stir and allow it to soak for two minutes.
Add broccoli and garlic to a bowl, add pureed avocado and nutritional yeast and mix with a stick mixer to get a green puree.
400 g rice noodles
3 tbs salt
1 tsp olive oil
Add water to a big pot and bring it to a boil. When the water starts to boil, add salt and pasta. Stir several times while cooking. Cook the pasta according to the manufacturer's instructions.
Drain the noodles and add them to a hot frying pan with a teaspoon of olive oil. While constantly stirring, lightly roast them to avoid them being slimy (approx. 2 minutes).
Add the green puree, pieces of broccoli, and avocado you saved at the beginning to the noodles and mix well.
