Makes 10 cookies


  • 250 g plant based butter

  • 3 tbs coconut sugar

  • 400 g spelt flour

  • 1 tsp baking powder

  • 1 tsp bicarbonate soda

  • 1/2 tsp salt

  • 1/2 tsp vanilla

  • 1 cup chocolate chips

Cream together butter and sugar until smooth. Put the rest of the ingredients into a bigger bowl and combine. Stir the dry ingredients into the butter mixture. Cover and leave in the fridge overnight. Preheat the oven to 180°C. Make little balls, you can use the ice cream scoop. Place the balls on a baking sheet and bake until they are golden brown. Aprrox. 15 minutes.
