For cucumber salad
2 cups cherry tomatoes
the green part of spring onion
bunch of chopped cilantro
salt and pepper
Slice the cucumbers with a mandoline slicer, add randomly cut cherry tomatoes, chopped spring onion, and cilantro. Season and mix well.
Gently toast the tortillas in a pan then fill them with bbq jackfruit, guacamole, randomly cut and pan-fried smoked tofu, and cucumber salad. Sprinkle with fresh sprouts. We used radish sprouts which are slightly spicy.
