BBQ JACKFRUIT TORTILLA WITH PEPPER SAUCE AND TOMATO SALAD

Serves 2


Ingredients:

  • 4 tortillas

  • BBQ jack fruit

  • pepper sauce

  • tomato salad

  • smoked tofu

  • fresh sprouts

  • small bunch of fresh parsley



For pepper sauce

Ingredients:

  • 2 cubanelle sweet peppers

  • ½ cup soaked pine nuts

  • the white part of spring onion

  • 1 tsp ground paprika

  • fresh chili to taste

  • 1 - 2 tsp lemon juice

  • salt

  • water as needed

Remove the middle of the pepper and cut it to your liking. Add all ingredients to a blender and blend them until smooth. If the sauce is too thick, add some water for easier blending.

For tomato salad

Ingredients:

  • 8 juicy red tomatoes

  • green part of spring onion

  • small bunch of dill

  • salt and pepper


Randomly cut the tomatoes, add the chopped green part of spring onion, dill, season, and mix gently.


Gently toast tortillas in a pan, fill them with bbq jackfruit, pepper sauce, tomato salad, and with randomly cut pan-fried smoked tofu that was glazed with tamari. Sprinkle chopped parsley and fresh sprouts on top. We used radish sprouts which are slightly spicy.
