Banana cream


  • 1½ frozen bananas

  • 50-100 ml thick coconut milk

  • pinch of bourbon vanilla

  • ⅓ tsp cardamom and/or cinnamon powder

  • 1 tsp lemon juice

Mix pieces of banana and other ingredients for the cream in a blender until the mixture is smooth. Adjust the density with extra milk or banana. If you want a colder structure, add a few ice cubes.

Chocolate ganache


  • 1 tbs raw coconut oil

  • 1 tbs raw cacao butter

  • 1½ - 2 tbs raw cacao powder

  • pinch of bourbon vanilla

  • a tiny bit of quality salt

  • *optional - sweetener (stevia, coconut nectar...)

Melt oil and butter in a glass dish over the steam. Remove from the steam, add cacao, vanilla, and salt (including sweetener if you wish), and mix well. If necessary, adjust the amount of cacao.



Add banana cream to a cup, pour the chocolate ganache, which will harden real quickly, over the cream, and sprinkle with walnut halves or other seeds or nuts that you like.
